Musciscka is a typical product of Gargano and Monti Dauni which, in the original version, is made with sheep meat or goat meat. The version of Musciscka made from Fattibene is instead produced from pork fillet, cut into strips, salted, seasoned and then dried. The end result is a very lean jerky meat (only 4% fat ) rich in protein (more than 45%). The word comes from Arabic“musammed” (hard thing).
